I have a gaf ST/1002 camera and according to the manual it automatically sets the correct film speed for exposure control for the following combinations:
25/40
40/64
64/100
100/160
160/250
250/400
400/640
Does anyone know how it will most likely "recognize" Tri-X 7266 which is rated at 200/160 and how I should compensate? The camera has an exposure adjustment knob.

Myself, I'd shoot some tests - same shot under/over by 1/2, 1, 1.5 etc...
Actually I'd just toss the cart in and start shooting, but that's not very helpful.
