Camera and Film Stock comparison

I am wanting to run some tests on some various cameras in order to determine if they even work, but am also interested in how they compare (in terms of quality of lens, etc..) What is the best way of testing things such as this?

I am also wanting to run some tests comparing various filmstocks,what is the best way to go about comparing the resolution, color, etc..? besides just my opinion on how it looks (Which is of course very important, but I also want to come up with some technical on the subject)
