Since K40 was tungsten balance, the first choice of a film to replace it would also be a tungsten balance. Again, 64T is one of the nine exposure indices recognized in standard SMPTE 166-2004. Unfortunately, some cameras are technically non-standard, usually to save cost. For cameres that only read 40T, there are work-arounds, or some labs may offer pull process E-6.

Remember, the E-6 process can be easily pushed or pulled, so some labs may decide to offer a pulled process with an effective EI of 40 for those user who know their camera was incapable of exposing the film at the correct Exposure Index. VISION2 Films

Normally, you should use the slowest film you have enough light for, so 200T would be preferred to 500T, even if you give 2/3 stop more exposure to the 500T to reduce graininess. But for flexibility, you may be willing to accept the slightly higher grain of the 500T film.
